Green Plantain Chocho Tortillas
These Green Plantain Chocho Tortillas reimagine a traditional staple with whole-food nourishment. Made with PRONTO CHOCHO Andean Chocho Powder, they provide complete plant protein alongside naturally occurring fiber in a versatile, gluten-free wrap that supports balanced, satisfying meals from breakfast tacos to hearty grain bowls.
Instructions
Bring a pot of water to a boil. Add chopped green plantains and cook 8–10 minutes until fork-tender
Drain well and transfer to a food processor or large bowl.
Mash or blend plantains until smooth.
Add olive oil (or avocado oil), salt, and PRONTO CHOCHO powder.
Mix thoroughly until a soft dough forms.
Add warm water gradually if needed to achieve pliable, non-sticky dough consistency.
Divide dough into 6 equal portions and roll into balls.
Place each ball between parchment sheets and press or roll into thin rounds.
Heat a skillet over medium heat with a light coating of oil.
Cook each tortilla 2–3 minutes per side until lightly golden and flexible.
Keep warm in a clean towel until serving.

¼ tsp cumin
Fresh chopped cilantro
