Andean Aji Verde Protein Sauce
Bright, herbaceous, and gently spicy, this Andean-inspired sauce balances fresh citrus with the warmth of jalapeño and garlic. The chocho powder adds body and subtle nuttiness, creating a creamy texture without heavy ingredients.
Instructions
Add cilantro, jalapeño, garlic, lime juice, olive oil, and water to a blender.
Blend until smooth and vibrant green.
Add PRONTO CHOCHO powder and blend again until fully incorporated.
If using, add Greek-yogurt or plant-based yogurt and blend briefly to combine.
Adjust thickness with additional water as needed.
Season with salt and pepper to taste.
Chill for 20 minutes before serving to allow flavors to deepen
Optional additions:
1 tbsp apple cider vinegar (for extra brightness)
1 tbsp fresh parsley
½ avocado for added creaminess
1 tsp cumin
