Instructions
Heat coconut oil in a large pot over medium heat.
Add onion, garlic, ginger, and lemongrass. Sauté 3–4 minutes until fragrant.
Pour in vegetable broth and coconut milk, stirring to combine.
Add PRONTO CHOCHO powder and whisk until fully smooth and incorporated into the broth.
Add mushrooms and carrots.
Bring to a gentle boil, then reduce heat and simmer 15–20 minutes until vegetables are tender but intact and flavors develop.
Remove large lemongrass pieces if desired.
Add lime juice, season to taste, and warm 1–2 minutes before serving.
Optional:
Add spinach or snap peas in the last 2–3 minutes for fresh texture.
